Tomatillo salsa



Tomatillos......the Mexican husk tomato. It can be eaten raw or roasted as in this recipe.


24 Tomatillos - husks removed and halved

2 Jalapeno peppers - sliced in half

1 Bunch spring onions

1/3 Bunch chopped coriander

Pinch of salt

Juice of 1 lime



In a roasting tray place the prepared tomatillos and the peppers, roast on high heat for 15 minutes or until softened and slightly charred

Tomatillos and pepper ready for roasting

Then Blend in your food processor - leaving it slightly chunky

Allow to cool and then add the chopped spring onions, coriander, lime juice and salt


I served this on a Mexican night with some delicious char grilled sour dough
