Rich chocolate mousse

200g Dark chocolate

50ml milk

2 Eggs plus 2 Egg whites

1/2 Tsp Vanilla extract

40g Caster sugar



Melt chocolate and milk in a bowl over water stir together and cool slightly Separate the eggs and stir in egg yolks till well blended stir in vanilla whisk whites to soft peaks add sugar gradually to the whites and continue to whisk till stiff and glossy stir in a ladle full of whites to the choc mixture to lighten it then fold in the rest transfer to containers and chill for at least an hour
