A perfect BBQ seasoning to rub on before slow cooking.
4 teaspoons salt
2 teaspoons dark brown sugar
1 1/2 teaspoons granulated sugar
1 teaspoon Dried oregano
2 teaspoons smoked paprika
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/8 teaspoon dry mustard
1/8 teaspoon ground cumin
1/8 teaspoon ground ginger
Simply mix it all together and rub all over the pork butt. - get it with the bone in for best flavour.
Set your oven to 200F
As I don't have a smoker on board I like to rub this marinade over then place in a roasting tray on a bed of sliced onions.
Then getting it in the oven by 11pm cover with foil and cook in the oven overnight, it is usually done beautifully by 7am (8 hours cooking) when I get up to finish the sour dough.
Of course you don't have to do it overnight but its kinda nice to have the food working for you as you sleep!
Then its ready to pull apart and mix with your favourite BBQ sauce.... finish with chopped coriander. Delicious in a seeet dough bun with slaw !
