Pistachio nut ice cream

8 Egg yolks

200g Caster sugar

850ml milk

1 vanilla pod

4 Tbsp Mascarpone

6 Tbsp Amaretto

600ml Double cream

150g Pistachio paste

make a custard with the egg yolks , sugar and milk beat together the mascarpone and amaretto and vanilla add to the custard add pistachio paste to custard whip cream and fold into the custard when cold

Churn in machine till frozen
