Olive oil, Mandarin and dessert wine cake

1/2 cup Olive oil

220g Caster sugar

3 Eggs

200g Self raising flour

1/2 Tsp Bicarb soda

100g Ground almonds

250g Greek yogurt



whisk oil, sugar and salt then add eggs one at a time beating well after each sift flour, bicarb and grd almonds into a bowl, fold into egg mixture with zest and yogurt cook in lined tin for 45 - 50 mins at 180 degrees till tester comes out clean Wine syrup... 200 ml dessert wine 150g sugar heat till sugar dissolves and spoon over cooked cake
