Mississippi Mud cake
1 and 1/4 Cup Strong black coffee
250g unsalted butter cut up
200g dark chocolate - cut up
2 Cups Sugar
1/2 Cup Port
1/4 Cup Brandy
2 Cups Plain flour
1Tsp Bicarb soda
2 Eggs
1/2 Tsp Vanilla
Pinch of salt
Line 23 cm cake tin with paper Melt coffee, butter and chocolate in a bowl remove and add sugar - stir well cool a bit and add brandy and port sift in the flour, bicarb and salt beat the eggs and vanilla together and mix in cook for 1 - 1 1/4 hours at 180 degrees c Topping 2 tablespoons of cream 60g unsalted butter 185g dark chocolate
