Enough to cover the bottom of you pan - Extra virgin olive oil
2 cloves of garlic
2 cloves crushed garlic
1 small red chilli
1 bunch of basil
20 ripe tomatoes peeled and chopped
salt 'n pepper
Cut 2 cloves of garlic in half and rub the bottom and sides of the pan with it, leave in the pan. Add olive oil to cover the bottom completely, then add the chilli and basil. Heat all of this until the garlic starts to go brown, then remove the garlic and add the 2 cloves of crushed garlic and the chopped tomatoes. Turn the heat down and cook until the tomatoes disintegrate. Finish with more fresh basil and seasoning to taste.
