All you need are the ingredients!

Top tip: Fresh is best!

Cottage Pie

2lb minced beef

1 diced onion

1 diced carrot

1 stick diced celery

1 large clove garlic - minced

Small bunch of thyme - chopped

2 rashers of bacon - finely diced

1 bay leaf

Chicken stock

Vel jus

Worcestershire sauce

Cracked pepper

Tomato paste - 2 tbsp

Cornflour slurry

Frozen Peas


Method

Brown off mince

Sweat off veg and thyme till soft

Add fine diced bacon to veg - sweat


Drain excess fat off meat and add to veg

Add Tomato paste - cook out for a minute

Add chicken stock to cover and cook for an hour


Add a spoon full of good quality veal stock

Add Worcestershire sauce - a few splashes

A couple twists of pepper

Thicken with corn flour slurry

Add peas


Put in dish and cool before piping on the potato
