Chocolate mascarpone indulgence
4 eggs - seperated
3/4 cup caster sugar
1 tsp vanilla
2 Tbsp cocoa powder
1/3 cup corn flour
1/4 cup plain flour
125g Dark chocolate
4 egg yolks
3 tbsp Caster sugar
500g Mascarpone
grease and line two 20cm cake tins whisk whites till stiff then add the sugar and keep whisking till thick add the vanilla and egg yolks one at a time sift the cocoa with the cornflour, flour and baking powder and fold through gently pour into tins and cook at 180 degrees C for about 20 mins till firm to touch for filling - melt chocolate whisk egg yolks and sugar till fluffy add the mascarpone then add the melted chocolate chill till firm enough to spread assemble cake in layers sprinkle the cake layers with brandy syrup brandy syrup- 1/4 cup water 1 tbsp sugar 2 tbsp brandy make syrup then add the brandy
